Strawberries and Cream Chia Seed Pudding
1 16-oz. container fresh strawberries
1 13-oz. can coconut milk
1/2 C. chia seeds
1/4 C. honey
1 tsp. vanilla
Mix all ingredients in a blender. Pour into four jars or cups, chill well. Keeps in the fridge for 3-4 days. Containing no dairy, it’s totally vegan. The creaminess comes from coconut milk. This recipe is high in “good” fats, protein and fiber.
