Clean Eating Salmon Burgers
I decided to try salmon burgers for the first time last night. Salmon is not only good for you, it’s frugal too. Have you SEEN the price of ground beef lately? It’s crazy. Here is a healthy, cheaper alternative. I still made ground beef patties for the kids (as you can see below) but I personally thought the salmon burgers were just as good.
- 1 16-oz. can salmon, drained, flakes and bones removed
- 2 eggs
- 1/4 C. chopped fresh parsley (or 1 Tbsp. dried)
- 2 Tbsp. onion, minced
- 1/4 C. oatmeal
- 2 Tbsp. lemon juice
- 3/4 tsp. dried basil
- 1 pinch red pepper flakes
- Salt and pepper to taste
- Combine ingredients. Chill for 30 minutes, then shape into patties. Serves 4.
