- Two green containers veggies- peppers, onions and mushrooms (in whatever proportions you enjoy)
- Two red containers cubed tofu (firm
- Two yellow containers cooked quinoa
- 2 tsp. EVOO or avocado oil
- Chipotle pepper and cumin to taste
Saute veggies in 2 tsp. EVOO or avocado oil. Once tender, add tofu. Brown tofu slightly. Add cumin and chipotle pepper to taste. Add quinoa, scramble until hot. Makes two servings.
